Is it correct to transport to Italy during a prolonged Good Friday-Easter weekend?Will all a shops be closed?

I am formulation a outing to Italy,Milan-Florence-Venice in which prolonged weekend.But we am wondering will all a shops as well as restaurants be non-stop then.
